Asa Ransom House 2004: Apple Cheddar Chicken
Ingredients:

4 6-8 oz boneless chicken breasts
2 large Spanish onion sliced thin
1 T oil
1 T butter
2 NYS tart apples peeled and cored, sliced into rings
4 1 oz sliced NYS white sharp cheddar cheese
1 T brown sugar
1 T cider vinegar
1 cup NYS sweet apple cider
1 T NYS maple syrup
1 tsp cornstarch
1 tsp water

In a skillet sauté onions in oil until soft. Add brown sugar and start browning to a nice caramel color. Add vinegar. Place onions into an ovenproof dish.

Place chicken breasts in skillet with butter. Brown both sides and place on onions. Top with apple rings and cheddar and place in oven at 350 degrees. Bake 25-30 mintues.

In small sauce pan, bring cider and maple syrup to a boil, thicken with blended cornstarch and water. When chicken comes out of the oven, glaze browned cheese and apples with cider mixture. Serve over the onions.

Makes 4 servings
