Here’s the really exciting part…. finding a way to create your own New York Cuisine at home!The
chefs of New York’s finest restaurants are sharing their new recipes
with you. We have also selected some of our “tried and true” favorites
and added them as well. Each recipe also includes general wine
recommendations to enhance your meal. However, wine is a matter of
personal taste, so always remember: the best wine is the wine you like

are designed to do do exactly what their name implies... awaken your
appetite so that you can enjoy your meal. This is often an area where a
chef will really get out there and try something different, so be sure
to check this part of the menu and be a little adventurous.

Entrees - Lunch
So
it's only lunch... that doesn't mean it has to be boring. Just think
about it... when was the last time you prepared a real lunch at home?
This is a celebration! So spread your wings, try that dish you've never
made, and don't forget to pair it with a glass of wine. There is no
reason you shouldn't have an enjoyable break in the middle of your day.

Dinner:
whether eaten in or out, this is your chance to really take some time
and treat yourself to a relaxed meal. Talk with your family and
friends...share a bottle of wine... try something exotic or return to
your favorite comfort food.

Desserts
Mmmmmmm...
it is almost un-American to not treat yourself to dessert once in
awhile. And with all the fresh fruits and special products grown and
produced in New York, you can actually do this without being totally
decadent. But then, what better dessert in New York than New York style
cheesecake... oh, go ahead... you've worked hard for it!

Pairing wine with food is a topic that has generated a lot of
conversation over the last few years. It can be studied in detail and it
can offer a lifetime of learning. It is also a very natural thing to
want to do, but even more importantly, it is something that can be a
whole lot of fun. There are thousands of cookbooks and hundreds of
books about wine and many of them discuss matching wine with food in
great detail. There are a few hints that are helpful: 1) Try to match the weight of the wine and the food (heavier food, heavier wine and conversely, lighter food, lighter wine). 2)
Pay attention to the acidity level of the wine. Wines which are
slightly more acidic generally pair better with food – they cleanse and
refresh the palate so that your senses can pick up the nuances of the
delights you are sampling. 3) Human taste buds can experience (or
recognize) four general categories of flavor – sweet, sour, bitter, and
salt. Very simply put, in order to have a pleasurable experience, you
want to compare and contrast flavors. Comparing flavors would be
matching like flavors in wine and food – for example, a sweet wine with a
sweet dessert. Contrasting would be trying to balance one flavor type
against another – for example, if you have a spicy entrée, you may want
to try a slightly sweet wine with it. You will know when you have
found a pairing that works. (You will also know when you haven’t quite
hit the right match) They key to future success is to pay attention to
the combinations that please your palate and then try to hone in on what
made the match work. If you are brave, this quest can be an
adventure in which you go off and try new combinations all the time.
Sometimes you’ll make a mistake (you don’t have to tell everyone about
these), but sometimes you will hit on a truly new and wonderful
combination. When that happens, be proud and share the news! The
important thing to keep in mind is that you are the one who knows how
things taste to you… and they won’t taste the same to everyone. So if
you enjoy something, by all means, stick with it and enjoy it in good
health.
